Delicious And Hot Satay Lamb Recipe
Preparation time: 20 minutes
Total cooking time: 15 minutes
Serves: 4 to 6
Ingredients:
- 500 g (1 lb) lamb fillet, sliced
- oil, for cooking
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 tablespoons lemon juice
- 2 teaspoons grated fresh ginger
- 1/2 cup (125ml/4 fl oz.) coconut cream
- 1/2 cup (125g/4 oz.) peanut butter
- 1-2 red chillies, seeded and chopped
- 1 tablespoon soy sauce
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
Directions:
1. Heat the wok until it becomes hot, then add 1 tablespoon oil and swirl it around to coat the side. Then stir-fry the lamb in batches over high heat until it becomes browned and cooked, in the mean time adding more oil when necessary. After that remove the lamb from the wok and set aside.
2. Then reheat the wok, add 1 tablespoon of oil and stir-fry the onion over medium heat for about 2-3 minutes or so, or until it becomes soft and transparent. Then stir in the garlic, the cumin, the ginger, the chilli and the coriander, and cook for about 1 minute or so.
3. Then stir in the peanut butter, the soy sauce, the lemon juice, the coconut cream and the 1/2cup (125ml/4 fl oz.) of water. After that, slowly bring to the boil. Then return the lamb to the wok and stir it until heated through.
